I love beef jerky but I Always cringe at cutting up a good steak to end up with something so small. It seems one can make jerky from gound beef too: http://commonsensehome.com/ground-beef-jerky/

My father makes his own jerky. Eventually bought a dehydrator to make more faster. Once he tried making it from ground beef he never went back. In addition to not losing steak you can get the spice all through the meat so it tastes better. Also get any desired preservatives throughout so it can long term store better. It also dries more nicely and evenly and as for me I prefer the texture more as well.  So all in all YES you can and go for it!

I like beef jerky too but if it's too tough, chewing a lot of it gives me a headache and a tired jaw. Ground beef might make it a lot less tough, so it might be worth a try.

You can very the thickness much more with the ground beat to vary the crunch. My father likes it VERY dry but also makes it thin so you don't get that painful chewing issue.
